We paired five of our sweet dishes with five of Der Raum's signature cocktails and thoroughly enjoyed the collaboration with Matt Bax and Matthew Rees and the rest of the talented team.
Ian whizzed up some fancy apple sugar tubes for one of the courses which contained burnt vanilla cream, explosive hazelnut crumble and acidulated apple. Other highlights were our mint mousse sphere with lime shortbread, mint tapioca, compressed cucumber and sugar mint leaf and our liquid centre Mojito marshmallows.
The boys at Der Raum produced absolutely stunning drinks pairings and we look forward to further events and collaborations with them in the future - watch this space for details!
